Sparsh Ahuja, Sam Dalrymple and Sadia Gardezi: Taking India-Pak partition witnesses back to their childhood homes through VR

(August 17, 2024) “All the gold and silver that we owned, I, an 11-year-old child at the time, dug a deep pit and buried it to keep it safe, because we didn’t think we wouldn’t return. We thought we will be coming back, but we couldn’t,” lamented 84-year-old Dharampal, who migrated from Sialkot in Pakistan to Jammu, then Amritsar, and ultimately Bombay during the 1947 partition. He shared his memories of those painful days with the Project Dastaan team that has been working to facilitate virtual reconnections of people to the homes they left during the tragic times.

Dharampal’s father was tragically left behind during Partition on the other side of the border. “My uncle said, ‘I’ll give you the wood, I’ll give you all the wheat we have, get my brother back.’ They said, ‘We are not interested.’ My uncle couldn’t get his brother and he was later killed’.”

Dharampal’s story echoes the countless journeys undertaken by refugees during the partition crisis. The event affected the entire subcontinent who had to suffer irreparable loss and trauma for the rest of their lives. About 14 million people migrated and thousands perished during the 1947 partition.

Launched in 2018 Project Dastaan serves as a poignant reminder that ordinary people are the most impacted when a nation is torn apart. Their lives are uprooted forever. In 2023 Project Dastaan became part of the British Key Stage 3 school curriculum. The peace-building initiative has also facilitated reconnection of the Bangladesh nationals.

Recreating memories

Co-founded by Sparsh Ahuja from India, Sam Dalrymple, an Indian of British descent, and Sadia, a Pakistani national, the project is a tribute to the legacy of millions of refugees whose lives were changed overnight. The nationalities of Project Dastaan’s co-founders represent an interesting amalgamation of people deeply affected by the partition of India.

Their project has been facilitating virtual reconnections to the homes of partition survivors. About 50 percent of those interviewed have been able to see their childhood homes using VR technology. While attempts for all were made, the changed landscapes made it difficult, and impossible for other cases.

“One of the things we’ve learned throughout this entire journey is just how absurd it is that it takes a team of 30 volunteers spread across five different countries with the world’s most cutting-edge technology to take back grandparents who literally live just across the border. To all the people out there watching this video we have just one message: In an ideal world a project like this shouldn’t exist,” says Sparsh Ahuja in an interview.

 

The documentary filmmaker and founder of Project Dastaan, Sparsh is a 2020 National Geographic Explorer, the youngest-ever recipient of the CatchLight Fellowship. He graduated as a FitzRandolph Scholar in PPE at the University of Oxford. His debut film, Child of Empire, premiered at the Sundance Film Festival 2022, and his latest documentary short, Birdsong, screened at SXSW, Sundance London, Palm Springs ShortsFest, where it won Special Mention: Best Documentary Short and was shortlisted for the Grierson Award. It was later acquired by The Guardian. 

Bringing past to present

Talking about the process that they use to reconnect partition survivors to their childhood homes, Sam Dalrymple who happens to be the son of British descent author William Dalrymple remarks, “We begin by interviewing the partition witnesses. We then get our cross-border volunteer network to track down the locations and try to find any areas which may have survived. A lot of the places have changed, both countries have industrialised massively since 1947. And yet there’s always something which remains in each of these villages or towns. Wherever we have been, there’s a mosque, a well, a mandir, maybe the neighbour’s house that has survived. After this, we send our filming team out to recapture those areas.”

Like his co-founders Sam too has a deep connection with the subcontinent as many of his British ancestors were born, raised and died in India with their graves in different parts of the country. His book Shattered Lands: The Five Partitions of India 1935–1975, is due to be published in 2024.

 

“We edit the filmed content into a full six-minute experience. This is then taken back to the original partition witness shown to them and then exhibited more broadly to the general public in order to educate about partition and about the stories of those who’ve survived it,” he explains.

Sam Dalrymple is the Co-Founder and COO of Project Dastaan. He graduated as a Sanskrit and Persian scholar from the University of Oxford, where he served as president and co-founder of the Oxford University Silk Road Society. He has worked with The Aga Khan Trust for Culture (a multibillion foundation), Turquoise Mountain and Vagaband. Sam speaks proficiently in Hindi and Urdu, and can converse in basic Farsi.

Inspired by the pains of their grandparents

“When my Nanu was just seven years old, he was forced to migrate from a small village in modern-day Pakistan called Bela, and moved to New Delhi. I’d see him in the corner of our house in Delhi, he’d be scribbling Urdu in his Diary and I’d ask him Nanu , you know how to write Urdu? ” And he’d say, ‘yes, this is what we learnt at school but he’d close the diary quickly and would say ‘but now that time is gone,” shared Sparsh Ahuja.

It was during a coffee chat at Oxford University that Sparsh and his friend Ameena Malak from Pakistan exchanged their grandparents’ stories of Partition. They realised that their grandparents had travelled almost identical journeys in opposite directions, each yearning to go back home. However, due to wars, old age, and trauma, there were still too many barriers for either to return. This sparked the idea for Project Dastaan.

They brought their friends Sam Dalrymple and Saadia Gardezi who were studying at Oxford as well, on board and came up with the plan of a making sure every Partition survivor who they could find, would go home again, whether through virtual reality, video calls to locals who still remember them, or even an actual physical return, however difficult.

Across the border

Pakistan-origin Saadia Gardezi is the co-founder and creative lead of Project Dastaan. The illustrator and writer has worked as the Op-Ed editor for The Nation, one of Pakistan’s leading newspapers. Saadia graduated as an M.Phil. scholar in South Asian Studies, of the Weidenfeld Hoffmann Leadership Program at Oxford University. While pursuing Ph.D. at the University of Warwick she also works part-time as workshop facilitator and graduate tutor.

“We build bridges between India and Pakistan, and hope to educate people about the history and shared cultures of India and Pakistan through storytelling and films.

As Pakistan lead, I coordinate between volunteers and cultural heritage organisations in Pakistan, UK and India,” she mentions. For project Dastaan she has been deeply involved in researching partition stories and interviewing survivors.

“I have always had this sense of hankering of figuring out along that journey what changed, what took these communities that had been living for centuries together and turned them into enemies overnight. We wanted to go beyond just talking about the partition. We wanted to take these people back home,” says Sparsh.

Although they connected many people over phone calls, in this technological era virtual reality seemed the powerful solution to the yearning of partition survivors. “Old age and traumatic memories and the general fear linked to going back, still holds them back. Hundreds and thousands of people have not been able to go home (even after seven decades),” Sam remarks.

With the use of technological solutions, Sparsh, Sam, and Saadia are happy to help people of their grandparents’ generation cross borders. They are happy to turn their ‘crazy’ idea into reality.

A well-respected member of the Indian diaspora, Nilu Gupta, the Professor of De Anza College in California is also the founder of UPMA US (Uttar Pradesh Mandal of America). It’s a leading non-profit organisation in North America to help promote and preserve the rich cultural legacy and create a platform for socio-economic growth, and charitable causes of India. 

The organisation has been supporting various causes in Uttar Pradesh like free education to the under-privileged children, free skill development with placement, facilitating mass marriages of poor girls and better health facilities for the needy. 

From being an exporter to becoming a professor 

Before she moved to California, life took Nilu Gupta from Delhi to Europe. Quite different from what she is doing now, Nilu started off her career in the business of textiles. “I have been to many countries as an importer and exporter of textiles,” she says. 

After completing her Masters with a first class in Hindi from Delhi University, when Nilu got married, her husband was working as an engineer. It was Nilu’s keenness and acumen for entrepreneurship that he left his job to work with her as a business partner in their export-import venture. “I had honed my business skills watching my exporter father while growing up, and had joined him and my brothers in the family business.” she says. “After my marriage, my husband and I started our own venture,” adds Nilu.

Business took them to different parts of the world. “We stayed in Belgium and Holland for few years before deciding to set base in California,” she recalls. The couple were parents to three boys by that time.  

“When the kids were young, we took turns to travel for business,” says Nilu. Once they grew up, the boys secured admission in the US universities, and later the couple moved to US too from Europe. “By that time our kids were settled there and we had wrapped up our business venture to lead a more relaxed life.” 

A fresh start… 

Enjoying life without much work was not Nilu’s cup of tea, and she decided to engage in something meaningful to get a sense of fulfilment once she set base in California 25 years back. During those times the western US state did not boast of a rich and large Indian diaspora like today.  

In her second innings, Nilu decided to make use of her degree in Hindi and start working on promoting the language there. She was joined in her efforts by members of the India Community Centre there. She started teaching Hindi to people from the non-Hindi speaking states so that they are able to communicate in their national language.

Spreading her wings, Nilu reached out to De Anza College in the bay area of California to promote Hindi as a second language option on campus. “Students of the college had options to choose from more than a dozen foreign languages as their second language which included German, French, Spanish, Mandarin, Japanese, Korean and many more but Hindi was not part of the curriculum,” she says, adding, “Members of the India Community Centre and I wanted the national language of India to be one of the choices for students at De Anza like the languages of other nations.”  

Nilu found success in getting Hindi introduced in the college and was also selected to be the professor of the subject from a list of 50 applicants. It was the year 2006. She remains a professor of Hindi at De Anza College, California.  

“As per the rules, we were given the chance to introduce the language on the campus on the grounds that it would be discontinued if it fails to garner a given number of students.” Nilu did not want her efforts to go in vain.  

She worked hard to make learning so simple and interesting that it appealed to learners massively. With her efforts the course took off so well that De Anza has been running not one but two batches of Hindi learners.

“Twenty-five percent of learners are those who want to learn the language even if they are not from a typical Indian family, with just one parent belonging to the diaspora. The percentage also comprises learners who are not Indians but love the country very much and plan to visit it some day or love Bollywood films so much that they want to understand the language in totality,” reveals Nilu.  

“They find the classes so lively that they do not want me to take even a single day off,” says Nilu, who does not just teach the language but also introduces learners to Indian culture, its diversity and richness.  

“After completing my Master’s in Hindi, there was a desire to take up teaching and that was fulfilled later in life,” smiles Professor Nilu Gupta. A great satisfaction for her in this whole endeavour is keeping pace with the times of being a teacher in this modern era. Having passed out of Delhi University in 1960 when no one had ever heard of online learning, the dynamic teacher learned to impart lessons through the online mode during the pandemic.  

For the sake of Hindi  

Nilu has written several elementary books with unique techniques to make Hindi learning simpler for people based in California. She has also written several books of poetry and literature. 

Talking about her latest book, Vijayi Vishwa Tiranga Pyaara, Nilu mentions:

What is special about the book is that it is a compilation of poetry and prose of Indian origin people staying in 45 different countries.

Apart from teaching De Anza College students, she imparts free Hindi lessons to people in need of it. Nilu and her Hindi loving friends in California have also formed a group called Vishwa Hindi Jyoti. “We meet every month for Kavi Ghosthis (sessions of poetry),” says the poet who has written over 500 poems. One often finds her writing poetry using her smart phone. “I keep on writing as and when ideas come to my mind,” she says.   

The Indian Consulate of San Francisco, California has entrusted Nilu and her Vishwa Hindi Jyoti team with the responsibility of organising significant events like Hindi Diwas (14th September) and Vishwa Hindi Diwas (10th January) since the last two decades.  

“I am grateful to my team members of Viswa Hindi Jyoti for their dedication and support over the years,” she says. “It’s because of the entire team that we have been doing so well,” says the humanitarian who is in the thick of all diaspora happenings, including welcoming and hosting events for Indian delegates visiting the Consulate. 

Giving back… 

Nilu and her friends from the diaspora started UPMA (Uttar Pradesh Mandal of America) in 2006. Through leading organizations in India and America, the organisation has been actively working on the causes benefitting the society like free education and skill development with placement, facilitating mass marriages of poor girls and providing better health facilities to the needy in Uttar Pradesh.

“Pravasi Bhartiya Samman that got bestowed upon me was looking at my contribution in not only the sphere of Hindi but also for my social work initiatives,” she adds. The professor is very active in charitable initiatives.

I tell people that they can call me anytime for social initiatives. I am available 24X7 for a good cause.

The philanthropist has been actively supporting a charity - SaiDham, run by her brothers in Faridabad, Haryana. Through this, Nilu and her family in India have been providing free education and food to close to 1,500 children. They have also contributed money to help poor parents marry off their daughters. 

The course of life  

Professor Nilu Gupta feels happy that she has played a role in a movement where people now feel proud about learning the national language of India. “Earlier people of different diasporas like Spain or Germany used to talk in their mother tongue but we Indians communicated with each other in English. Through UPMA there is a constant effort to keep Hindi and the cultural link with India alive especially amidst the Gen Z of the diaspora who are born and raised in America,” says the humanitarian who does not want youngsters to lose touch with their roots.

“We have created a little Bharat here and have been organising programmes to bring the Indian diaspora together to celebrate festivals and contribute to humanitarian causes. Close to 6,000 people gather during festive times to be part of garbas and other celebrations,” she mentions. 

Hindi in the blood  

“Hindi is in my blood because it’s my mother tongue. I don’t feel I do not live in India. In this digital world, staying connected with your country is easier,” Nilu remarks.

The doting grandmother is a role model for her granddaughter. “She loves conversing with me in Hindi only,” says the proud matriarch who is happy to help young people stay in touch with their cultural legacy, so that they can take it forward for generations to come despite being born and raised in a foreign land.

MP Dr Gaurav Sharma: The Himachal boy who became a leading advocate for healthcare reform in New Zealand

(October 30, 2024) Dr. Gaurav Sharma stands out as one of New Zealand's most compelling voices in public health and politics. From his roots in India’s Himachal Pradesh to his role as a Member of Parliament for Hamilton West, Sharma’s journey reflects a rare blend of medical expertise and political ambition. Known for his advocacy on healthcare reform and his groundbreaking work in public policy, Sharma’s path to Parliament wasn’t straightforward. Yet, with each achievement—from top student to WHO intern to MP—the Global Indian has proven himself driven by a commitment to community and meaningful change. Gaurav Sharma was born in a small town in Himachal Pradesh, nestled in the Himalayas, where opportunities were scarce, but dreams were big. His father was determined to carve a better life for his family, and in pursuit of that, he moved to New Zealand with little more than $250 and multiple degrees. Adjusting to a new country and culture was challenging. Gaurav recalls feeling out of place, especially with the linguistic and cultural differences. “I came from a small Indian town where everyone knew each other, and now I was here, surrounded by unfamiliar faces and voices,” he shared. However, these initial challenges only fueled his determination. He threw himself into his studies, eventually attending Auckland Grammar School, where he excelled academically, despite starting at the bottom class. By the time he graduated, Gaurav had won nine awards and became runner-up dux, a testament to his hard work and focus.

Finding purpose in medicine

It was during his high school years that Gaurav found his calling in medicine, a path that was not obvious at the beginning. During his sixth form at Auckland Grammar, Gaurav volunteered at a local elderly care facility, a decision that changed the course of his life. "Volunteering at the rest home was a humbling experience," he explained. "It shifted my perspective on what it meant to truly care for people. I had initially joined as a way to gain experience, but it quickly became more than just a task—it became a calling."

This exposure to healthcare led him to cancel other extracurricular activities to focus solely on his volunteer work, committing to four years at the facility. His dedication was recognized, and he was soon admitted to the prestigious medical program at the University of Auckland, where he studied medicine and surgery. Here, Gaurav's interest expanded beyond clinical care to include public health and policy-making. "I saw that healthcare was not just about treating individuals but about creating systems that could impact entire communities," he said. His experience at the university solidified his resolve to make a difference, not just as a doctor but as a health advocate.

By the time he was 21, Gaurav had already begun advocating for healthcare policies, serving as the elected representative for over 3,000 medical students on the New Zealand Medical Student Association board. In this role, he worked with the Ministry of Health, various specialty colleges, and the Medical Council of New Zealand, shaping policies aimed at encouraging healthcare workers to train in rural areas and high-demand specialties. "Those early years taught me the power of policy in shaping healthcare outcomes. I wanted to help design systems that would reach the most vulnerable," he shared.

A global perspective and the call to serve

In his fifth year of medical school, Gaurav’s commitment to public health led him to research climate change as a significant health issue for New Zealand. His research attracted attention, and he was encouraged to apply for an internship at the World Health Organization (WHO) in Geneva, Switzerland. The opportunity to work at the WHO marked a turning point, as it gave him an understanding of the global dimensions of health and the role of policy in addressing systemic challenges.

At the WHO, he worked in the Non-Communicable Diseases cluster, focusing on implementing research findings in developing countries. He witnessed the stark realities of healthcare access in poverty-stricken regions and how systemic inefficiencies affected millions. “Working at WHO expanded my perspective on what healthcare could be. It was no longer about individual patient care but about creating policies that could alleviate suffering on a much larger scale,” he said.

During his time in Geneva, Gaurav Sharma also joined the Geneva Intern’s Association board, where he advocated for interns from UN-affiliated organizations, reflecting his growing passion for leadership and advocacy. This experience reinforced his belief that healthcare professionals could influence not only medicine but broader social and political landscapes. Upon his return to New Zealand, Gaurav brought back these lessons, ready to channel his experiences into impactful change on home soil.

Politics and public service

Gaurav’s entry into politics was a natural extension of his work in healthcare policy. His family’s journey and the challenges they faced as immigrants in New Zealand had shaped his values, and he saw in the Labour Party a platform to advocate for those values. "The Labour Party’s commitment to social justice and opportunity aligned with what I wanted for New Zealand. It was about creating a fairer society for all Kiwis, regardless of their background," he said.

In 2017, he ran as the Labour candidate for the Hamilton West electorate. Although he didn’t win, he gained valuable experience and support within the community, which propelled him to run again in 2020. This time, he won, becoming the first MP of Indian origin to represent the electorate for Labour. His achievement resonated deeply within New Zealand's Indian community, as he symbolized the potential for immigrants to contribute to New Zealand’s political landscape. "Winning the election felt like a validation not only for me but for every migrant who has come here with dreams and aspirations," he reflected.

Once in Parliament, Gaurav Sharma served on the Health Select Committee, where he continued his advocacy for healthcare reform. He was passionate about addressing inequities within the system, pushing for more support for rural healthcare and improved mental health services. "Being in Parliament was a humbling experience. I wanted to use my voice to push for changes that would make healthcare more accessible and equitable," he explained. However, his journey in politics took an unexpected turn when he raised concerns about alleged bullying within Parliament. In a public op-ed, Gaurav alleged widespread bullying, claiming that some parliamentary practices undermined the well-being of MPs and staff alike.

The turning point and moving forward

In August 2022, Gaurav’s accusations of bullying within Parliament sparked a significant controversy. He claimed that the Labour Party leadership had ignored his concerns, leading to a highly publicized fallout. Shortly after his allegations, he was expelled from the Labour Party caucus, a decision that led him to serve briefly as an independent MP before ultimately resigning from Parliament. Reflecting on the events, he shared, "I believed that it was essential to stand up for what I saw as an unjust system. It was a difficult decision, but I felt that silence would have been a disservice to my values."

Following his resignation, Gaurav founded the Momentum Party, an unregistered political entity aimed at representing centrist values. Though he contested the 2022 by-election for Hamilton West under this new party, he did not secure the seat. Despite the setback, Gaurav remains committed to his principles and continues to advocate for systemic change within New Zealand’s political and healthcare systems.

Looking back on his journey, Gaurav Sharma reflects on the highs and lows with a sense of pride and determination. "I’ve come a long way from that boy who arrived in New Zealand, unsure of what the future held. My journey has not been easy, but each challenge has strengthened my resolve to make a difference," he shared.

Dr. Gaurav Sharma’s journey is far from over. From his roots in the Himalayas to the halls of New Zealand’s Parliament, his life embodies resilience, courage, and a deep commitment to service. He continues to be a voice for those who, like him, believe in the power of change and the importance of standing up for one’s values.

Serial entrepreneur Yaswanth Vepachadu finds biryani success

From setting up companies in the IT sector and then selling them to tech giants, Yaswanth Vepachadu has now ventured into biryanis and more, except that his biryani comes in a steel box that is yours to keep. (September 17, 2023) It is often said that once you get bitten by the entrepreneurial bug, no challenge is big enough. That would be the case for Yaswanth Vepachadu who, after graduating in civil engineering from the Vasavi College of Engineering, Hyderabad, went on to do his MBA from the NM Institute of Management in Mumbai. Thirteen years of shuttling between the US, sometimes just for a weekend even, Canada and India resulted in the establishment of several companies that he set up. group of companies which he quit only last month, Yaswanth, over a casual conversation with friends about the unavailability of a good biryani in Bengaluru, decided to start an outlet of his own. He also had a couple of friends in Vancouver, Canada, willing to invest and that is how Neos Biryani was conceptualised. Yaswanth recalls, “Earlier this year when my friends and I couldn’t get a decent biryani in Bengaluru, we decided to start a food business to make the kind of biryani we liked. We rented out a central kitchen space, which also belongs to one of my friends, and started research. We hired 24 local chefs, who know how to make a true biryani and Bangladeshi Muslim specialist cooks from Odisha. Between them, we zeroed in on the formula for the masalas to use and the recipe to follow. We have now hired four out of the 24 permanently and they work at the main kitchens. For the second level of staff, we hired hotel management graduates who follow the recipes created by the chefs without making changes.”

Neos ka Dabba

Interestingly, Yaswanth didn’t attribute any meaning or specific connection to the name Neos. He shrugs, “I just wanted a four-letter word; I thought of Neos and it got accepted during registration.” And what about the steel dabba that the biryani is served in? He elaborates on the philosophy behind it. “During our research and brainstorming sessions, we found that biryani is the most ordered dish by middle-class and lower middle-class people on weekends. Also, women in this demographic have great use for steel dabbas and cherish the ones they have. So, we thought it would add value to the dish when they ordered it as they could keep the box and use it for other things later.” The boxes come in three sizes, based on the serving for one, two, or four people.

The business model he follows is that of cloud kitchens and QSR takeaway outlets. In Hyderabad, the cloud kitchens are in Kukatpally and Kokapet, and AS Rao Nagar and LB Nagar are on the anvil. He will shortly launch in Mumbai and some more outlets in Bengaluru, where currently, they are in Electronic City, Bomasandra, Whitefields, and Hebbal. A diner that can seat 40 people is also part of the expansion plan for Electronic City.

He even has two cloud kitchens in Vancouver, Canada. There, Neos is based in a shared kitchen space, much like co-working spaces. And based on Canada’s food regulations, the recipes have been tweaked to lower spice levels. In Hyderabad, there are QSR takeaway joints where you can buy the Neos biryani offline. The cloud kitchens supply these outlets.

Expanding menus and the company

Launched in March 2023, Neos follows the standard recipe created by its chefs for the biryanis available. However, customer feedback led to Yaswanth having to expand the menu to include starters like kebabs, shawarmas, rice bowls like rajma chawal, palak paneer and rice, chicken curry, and rice etc. The biryani of course is the star of the menu and comes in veg, mushroom, egg, chicken, and mutton and a mixed one with chicken, mutton, and prawns. Within the chicken version alone, there is the 65, lollipop, fried, and dum-cooked biryanis to choose from.  But, Yaswanth is very particular about quality. Hence the quantity made is limited. He says, “Between all my kitchens in Hyderabad, we make only 300 portions of biryani per day. I have found that when you increase the quantities, the quality goes down. On weekends, when there may be more demand, I makeup to 400 but not more than that.”

Yaswanth has been a stickler for good quality from the start. Even the ingredients used have been carefully chosen by him and his team. He says, “I know that people consider other rice strains also good for biryani, especially in Kerala and Tamil Nadu, but in Telangana, you won’t be forgiven if you don’t use basmati rice. The basmati I get is specially brought from Punjab and costs me Rs 170 a kilo. For the spices we needed based on the recipe we finalised, we went to Wayanad in Kerala, and spent ten days meeting various growers and suppliers, before zeroing in on the one whose quality we liked the best. Our ghee comes from one supplier in Ramanthapur (a distant suburb in Hyderabad) and it costs Rs 1500 a kilo. His ghee is famous. You go there and ask anyone for Ramanthapur ghee and they will point you to his outlet. We even send this ghee to our cloud kitchens in Canada. The meat in Hyderabad is sourced locally, but here too, we stress quality.”

Despite all these factors and the costs involved, Neos began making profits early on. Started with an initial investment of Rs 60 lakhs, with more funds infused later, an investor also showed interest and he has bought an eight percent stake in the company. Yaswanth now plans to open outlets in the US and some more in Canada.

Strangely, the only challenge Yaswanth has faced is from petty customers. Human nature being what it is, people would order the biryani without the steel box [that was an option on the menu for those who didn’t want the dabba on food delivery apps], then post pictures and reviews saying they did not receive it in the steel box. Or, they would remove one piece of meat and say the quantity was not as promised. Yaswanth had to personally speak to the customer service heads of these apps to have the problem sorted. He has also now discontinued the box-free option of the biryani on the apps. Only the takeaway outlets will give it to you in foil packaging. If you order online, it will come with a steel box.

In the ubiquitous world of the much-loved biryani, to be able to make a mark with a new brand within a short span of time is no small achievement. And with expansion plans afoot, this Global Indian is likely to make the steel dabba biryani a familiar sight soon.

Growing Years

Garg grew up in a middle-class family where his upbringing was deeply influenced by watching his parents navigate the hustle and bustle of city life. "My parents were determined to give me and my sister the best education possible, enrolling us in one of the city's top schools, N. L. Dalmia High School. Though it was a mere 20-minute rickshaw ride away, yet the sacrifices my parents made to afford our education were immense. They often skipped leisure and convenience, demonstrating a relentless commitment to our future," he recollects.

Interestingly, he has entrepreneurial spirit in his roots. Both his maternal and paternal grandparents were involved in various businesses, his father has own venture and his mother started her own business, after two decades in the corporate world. "These influences instilled in me a strong sense of business acumen and the importance of hard work and resilience. I saw firsthand how my parents balanced their professional and personal lives, often making significant sacrifices to ensure our well-being and success," he adds.

Chartering his Trajectory

Hailing from a Marwadi background, his parents initially envisioned a traditional career path for him specifically in Chartered Accountancy. And while he started working on it, he knew his heart was in the culinary field. "During a pivotal conversation with my parents in the 10th grade, I expressed my dream of opening a hotel business after completing my CA. They were initially surprised but ultimately supportive of my aspirations. This marked a significant turning point in my life, as their encouragement gave me the confidence to pursue my true passion," he says. And the discovery of Le Cordon Bleu Paris, a prestigious institute known for its comprehensive culinary education gave fuel to his dreams. "Despite the availability of numerous esteemed Hospitality Management Institutes in India, none offered the specific culinary training I sought. I knew that Le Cordon Bleu would provide me with an in-depth understanding of the Food and Beverage industry, essential for my future career." However, the cost of education at Le Cordon Bleu turned out to be a significant barrier and his parents suggested that he pilot his culinary ambitions a few years before formally enrolling in the institute.

Culinary Roots

To demonstrate his commitment to his passion, he initiated a mid-day meal supply service from home in mid-2014, just after completing his 10th grade. "With financial backing from my parents, I hired a few people to help run the operation. As I repaid the initial loan, I sought additional funds to expand the business. I borrowed ₹5 lakh from my parents, leased a small takeaway outlet, and set up the infrastructure, sourcing raw materials from various vendors," he recollects. His determination led him to cold-email bigger institutions with proposals to manage their cafeteria services. "One notable institution was N. L. Dalmia High School, my alma mater. Despite my lack of experience in serving large numbers of people, the school authorities decided to give me a chance. With another ₹15 lakh loan from my parents, I embarked on providing cafeteria services to my former school. This experience was invaluable, as I learned to manage large-scale operations, including serving thousands of people, managing central kitchens, and overseeing a team of over 140 employees." And all of this was done while balancing academics with his burgeoning business.

Canadian Call

It was after he proved himself at home that he managed to get enrolled into Le Cordon Bleu's Ottawa branch in Canada. His parents helped him significantly, including mortgaging their home to support his education abroad. “This experience was transformative, both personally and professionally. As a shy and naive young person, flying out of the country for the first time and leaving my family behind was daunting. However, it marked the beginning of an incredible learning journey,” he says.

At Le Cordon Bleu, he gained a professional approach to culinary arts, which complemented the practical skills he had acquired in Indian kitchens. “While my earlier experiences taught me the 'what' and 'how' of cooking, Le Cordon Bleu emphasised understanding the 'why.' This analytical approach allowed me to refine my techniques and develop a deeper appreciation for the culinary craft. Working part-time in various restaurants while studying helped me further hone my skills and save money, ensuring I maximise my time abroad.” In the last decade, he has diversified his experiences in the food and beverage industry at restaurants, run mass catering businesses, owned, and operated international restaurants, and consulted with processed and packaged food brands, ranging from startups to well-established companies.

Hospitality Platform

He is also the Indian Cuisine Ambassador on a global culinary platform, The Chef & The Dish, where he shares his expertise and passion for Indian cuisine. He has also formalised a platform - Miracolo Hospitality that boasts of multiple segments of the Food and Beverage Industry. "From a state-of-the-art Product Development Centre to a fully equipped Studio Kitchen, an F&B Consulting brand that works tirelessly with both young startups and established brands on recipes and products right from ideation to execution phases," he says.

Staying Inspired

He finds his motivation in his parents, particularly his mother. "Their relentless hard work, determination, and sacrifices have always inspired me to strive for excellence. I am driven by a deep desire to give back to them and make them proud. This unwavering drive propels me to tackle any challenge that comes my way, always saying ‘yes’ to work opportunities, regardless of their scale," he says. Like many business owners in F&B industry, the Covid-19 pandemic was one of the most challenging periods in his journey. "With the closure of institutions, my cafeteria business in India came to a standstill. Supporting over a hundred employees during this time was difficult, but we managed to sustain them for almost a year until they migrated back to their hometowns. This period tested my resilience and adaptability. To navigate these challenges, I pivoted to consulting in the processed foods sector, leveraging my expertise in kitchen-based recipes, and learning about food science and technology. Collaborating with various brands, I gained insights into the intricacies of the food industry beyond traditional culinary practices. This adaptability and willingness to learn allowed me to overcome the hurdles posed by the pandemic and continue my professional growth," he says.

Learning Blocks

Throughout his journey, he has learnt that perseverance and adaptability are crucial to overcoming obstacles. "Whenever I encounter a hurdle, I focus on finding solutions rather than dwelling on the problem. This proactive approach has helped me navigate various challenges and maintain a positive outlook. I believe that persistence and patience are essential, as at times even time needs time to make things right," he says.

In his leisure time, he enjoys swimming, table tennis, lawn tennis, and squash. “I also love exploring new places, often taking solo trips with a business book in hand. These trips allow me to pause, reflect, and recharge, enabling me to continue my journey with renewed energy. I am an avid movie enthusiast and can spend an entire day in a theatre, immersing myself in different films,” he says.

Future Perfect

He is also in the process of launching two restaurant brands, Babbar Rolls, a quick-service Indian cuisine restaurant catering to the fast-paced corporate crowd and, Razzo, offering premium Italian street cuisine. "In addition to these ventures, I aim to continue expanding our consulting footprint, helping more food brands navigate the complexities of the industry while also launching owned ventures via different unique brand concepts. At Miracolo Hospitality, we aim to set foot in the Indian Premium NightLife culture in times to come. My goal is to leverage my diverse experiences to create innovative culinary solutions and contribute to the global food and beverage landscape. With a strong foundation built on perseverance, adaptability, and a passion for culinary arts, I am excited about the future and the opportunities it holds."

Through his journey, he hopes to inspire others to follow their passions, overcome challenges, and achieve their dreams. “Whether it is through culinary arts, entrepreneurship, or personal growth, I believe that dedication and hard work can turn any dream into reality,” he signs off.

Ritika Shah: Bringing Ayurveda to everyday life in India and beyond

With a focus on research-based Ayurveda products more than just dietary supplements, Boston-based Dr Ritika Shah’s brand Herbostra shows you how to use traditional Indian formulations in an easy manner on a daily basis. (November 6, 2023) Her father has been associated with the Ayurveda industry for over three decades. And, Dr Ritika Shah, who grew up with Ayurvedic remedies being given to her as a child for colds and coughs, decided to pursue the same field of medicine. She has completed her Bachelor’s and Master’s degree in Ayurveda, specialising in Rasa Shastra and Bheshjaya Kalpana or research and development of Ayurvedic formulations, in other words. Married to an IT professional, Vinit Tougani, she is currently studying for her second Master’s degree at the University of Massachusetts, Lowell, in Boston. Ritika says, “The reason I am doing a second Master’s degree is to learn analytical techniques like those that are used in the pharma industry. In 2018, Ritika launched her company called Herbostra, with a bouquet of ten products in 2019, at Cosmoprof, a pharma and health exhibition held annually in Bologna, Italy. All the products, still on the market, are her Ritika’s own innovations. Based on the concepts of Ayurveda, she has tweaked them for ease of use in one’s daily life. She says, “Usually, one associates Ayurveda with a lot of products needing prep work, like boiling a powder or churna to make a kadha or a concoction; then consuming 30 ml of it through the day etc. Other medicines or supplements are also prescribed in a similar manner. What I have done is simplified the process. My products are like nutraceuticals; they aid wellness.”

Ayurveda for Good Health

She reiterates that her products are not medicines. “Our products can help with various issues. Only two of our products – the digestive bitters and the diabetes-based diet infusion cubes – can be considered as medicines. The diabetes diet cube is the heartwood of the Vijaysar tree, also known as the Indian Kino, or Pterocarpus Marsupium; this tree is native to India. It is used in the treatment of diabetes. One needs to soak the cube overnight in water and drink this concoction the next morning to regulate sugar levels. The water’s taste doesn’t get altered, only the colour changes. There are no active ingredients in it.”

The digestive bitters too have been adapted to a modern-day lifestyle. “People know about angostura bitters, which are used in alcohol and non-alcohol-based drinks. Those bitters are not natural, made from quinine, they have a chemical base. They are not safe for consumption if you are pregnant. Herbostra’s bitters are natural and safe. I have made a concentrated version of the digestive bitters; and reduced the usual 30 ml required dose to two or three drops. You can add up to eight to ten drops of these bitters to anything from your cup of tea or coffee to a salad or a soup. Adding them to a soup will mask the taste but the benefits of the actives are still absorbed by the body. These bitters restore the balance in the gut and are effective for problems like acidity, IBS and to improve digestion,” she tells Global Indian.

All-round hygiene

Her product range includes 15 different items currently. Available in India, Belgium, Italy and the Netherlands, Ritika plans to acquire all the licences and certifications needed to market her brand in the US in the near future. Other items under the Herbostra umbrella include the Irimedadi toothpaste, an oil pulling mouthwash, probiotic hand cream and body lotion, a ghee-based lip balm, neem and camphor soap, balsamic air freshener, nourishing mother oil, destress massage oil, digestive bitters, turmeric pellets, and diet infusion cubes.

With a tongue-twister for the name of a toothpaste, and one that elicits no foam when used, how does Ritika convince people, Indians and Europeans, to try it? She says, “The USP of the toothpaste is that it is sulphate-free, unlike other brands. Our toothpaste is also fluoride-free; it contains neem, which is a natural fluoride. People object to using parabens and sulphates in their shampoos, but don’t realise that when they use toothpastes which contain these ingredients, these chemicals go into their mouths which is far worse. The main ingredient used is the bark of the Irimed or the willow tree. It belongs to the same family as the babool tree. We explain the benefits to our customers and it is our best-seller.”

Turmeric: Golden Child of the West

The one product which needs customers need no convincing for is turmeric. The West has recently woken up to the benefits of haldi, specifically, haldi wala doodh. Known in other parts of the world as turmeric latte or golden milk. Ritika agrees, “We all have had it since we were children, every time we caught a cold. Now, people here are realising its benefits.” Herbostra’s turmeric, in pellet form, is 90 percent curcumin and one percent black pepper extract, which is needed to increase curcumin’s absorption by the human body. Ritika says, “You can add one pellet to any brew like tea or coffee; you can even crush it into a spoon of pure ghee or sprinkle it over your salad [if olive oil is used in the dressing]. The important thing to remember is that curcumin from turmeric is not water soluble; it is fat soluble. Hence, we used to drink it in milk. You can add it to tea or coffee if you are having it with milk; to your food if it is cooked in oil, as oil is also a form of fat. And vegans can use coconut oil or coconut milk to consume it.”

Ritika’s pricing is also pocket-friendly. She says that her products are neither as expensive as some of the high-end brands, nor as inexpensive as the more generic ones. For example, the oil-pulling mouthwash is priced at Rs 295 for a 100 ml bottle and the toothpaste is priced at Rs 195. With plans to launch more products in the near future, and with a second Master’s degree to better aid her research, Ritika and Herbostra is truly taking Ayurveda to the world.
