Kebabs to Jackfruit Dabeli Bao: Chef Manav Tuli’s journey to a Michelin Star at Chaat, Hong Kong

(August 25, 2024) Rooted in tradition, Chef Manav Tuli, the man behind the Michelin-starred restaurant at Chaat, Hong Kong, likes to innovate. Now a chef-owner at Leela, Chef Manav’s love for improvisation has resulted in eclectic offerings like Oxtail Chakundar Gosht (cooked with beetroot and its leaves), Jackfruit Dabeli Bao and Tandoori pork ribs. From the iconic Chutney Mary in London, to winning a Michelin Star at Chaat in Hong Kong, and branching out as an entrepreneur, Chef Manav Tuli shares his incredible journey with Global Indian.

Chef Manav Tuli’s career milestones have the knack of propelling him to the next one. As also the setbacks his family had witnessed, when they moved to India, post-partition. Chef Manav recalls how he chose to become a chef. “My grandparents came from a wealthy family but lost everything after the partition,” he says. His grandfather was offered a government grant, which he refused, and went on to set up a restaurant of his own. However, things ended badly, when he was cheated by his business partners. “He lost his will to live after the losses. When my father grew up, those people gave him a job at the same restaurant. By the time I grew up, my father did not have good memories of those times and had a low opinion of the hospitality field. He was quite apprehensive of this profession and it was not considered prestigious during that time.”

A journey begins

To escape the pressure of pursuing a medical or engineering degree like the children of family friends were doing, Chef Manav joined the Indian Institute of Hotel Management, in faraway Thiruvananthapuram. “This led to my first job as a Commis at The Trident, Udaipur,” he says. This was followed by a post-graduate diploma at the Oberoi Centre of Learning and Development. During the two-year course, he travelled to Jaipur, Mumbai, New Delhi and Gurgaon between semesters and his final posting was at The Oberoi in Mumbai.”

Interestingly, Chef Manav witnessed the harrowing events of 26/11 at that time. He reveals, “I was leaving for Mauritius, and we had a party organised at the nearby Hotel Marine Plaza. Chef Matthew Crop’s (my boss) wife decided to leave the party early and went back to the hotel. That is when we heard about the terrorist attack and followed him there. We were not allowed to enter and all of us stayed near the Inox cinema complex across the road. It was a terrifying three days, but she was alright when the attack ended.”

Iconic brands and taking risks

Chef Manav admits he tends to keep asking himself, what next? From 2008 to 2011, he worked at the InterContinental in Mauritius. As far as cuisines went, he gravitated towards Indian cuisines. “At OCLD, we were taught all cuisines and I used to think, and even speak with my head chefs that I was wasting my time learning Italian or Japanese cuisines,” he admits. “I knew I would eventually be a chef making Indian food. This is because I believe that even if an Indian chef interprets something differently, an Indian making Indian food will always be accepted.” However, his diverse training paid off, resulting in his unique style.

Armed with early childhood influences of his grandmother cooking, and even pickling wild boar meat, Chef Manav, who was drawn to the nuances of fine dining, headed to London, where he joined Chutney Mary. It was a career milestone and Chef Manav and his wife lived in a studio apartment, saved as much as they could, and finally bought their own place. “My refinement as a chef happened in London.” There, he was also involved with the opening of Tamarind when it was rebranded with Chef Karunesh Khanna for the first year.

After eight years in London, Chef Manav was bogged down by monotony and wanted something more. The restaurant owners idea of rebranding was sending me to Mumbai with a list of restaurants to eat at and then recreating those dishes in London. That process did teach me a lot, but I also wanted to express myself more and discover uncharted waters.”

As luck would have it, Chef Manav joined Tamarind restaurant and did the opening as Head Chef. Soon, he got a call from his previous chef at Chutney Mary – Chef Siddharth Krishna – asking if he was interested in joining Rosewood Hotels at their flagship property in Hong Kong to launch Chaat, their Indian restaurant – the first Indian restaurant in Hong Kong at a five-star hotel. “I had no clue about Hong Kong, had never even been there, but I said yes.”

Success in the Orient

Moving to another country and city, despite being comfortable, was the result of Chef Manav’s philosophy. He says, “Your definition of success changes after doing the same job for seven years. It progresses with time, age and money. I knew that I would probably feel the same unrest at Tamarind after a while.” So, he decided to move, although his daughter was only eight months old and his wife had a steady job. The family landed in Hong Kong on 29th August 2019; amidst social unrest and riots. “The project got delayed and I started thinking that maybe I had made the wrong decision. But, we finally launched in May 2020, during Covid.”

There were several challenges starting from the fact that Chef Manav did not even like the name Chaat. “The name did not excite me; the first impression was that we would be serving extensive chaats,” he says. “Later it did make sense when I came up with the idea of ‘serving street food of India in an elevated manner’ and gave it a story by including kababs, biryanis, and curries, all of which are also available on the streets.”

Chef Manav spent the lockdown doing menu testing and tasting, besides cooking for VIPs and the staff, using the experience as an exercise in understanding local tastes and preferences. The restaurant became a huge success and some of the bestsellers he created here include the Octopus Biryani, Tandoori Tomahawk, Tandoori Char Siu, Raj Kachori, Baked Samosa made like a cream horn, with stuffings ranging from lamb to plant-based meat derived from jackfruit.

In 2022, under his leadership, Chaat won a Michelin star. He recalls how that panned out. “Michelin star for any Chef is the most unbiased and most prestigious award in the culinary world in my opinion. At Chaat, I was allowed to spread my wings and innovate. Pearl Yan, who was with Michelin Star approached us saying they were conducting interviews with chefs around the city. Halfway through it, she got a call which she answered. I found it rather odd that with all the camera people around, and in the middle of an interview, she was answering her phone. Then she gave me the phone and said, “This call is for you.” It was the Michelin team informing me that we had been awarded the Michelin Star! I started crying; I couldn’t believe it. It was one of the best days of my life,” he says.

The move to entrepreneurship

Again, the desire to move after the biggest achievement of a chef’s career struck. But he was now looking to be a chef-owner. It was a plan at the back of his mind that came to fruition sooner than he expected. He says, “At a chefs’ lunch, I met a friend, Chef Agustin Balbi and I asked him how he had launched Andō – the Michelin-starred Spanish Japanese restaurant. He had spoken to Yenn Wong, the CEO of the JIA group who helped him launch it. He connected me with her and we decided to launch Leela, at Causeway Bay.”

Leaving a well-established Michelin-star restaurant to launch a new brand was a risk. But Chef Manav was confident of his abilities despite the opening pangs. “I had peaked at Chaat, and was hungry for more. I wanted to leave before the monotony set in. Besides, as a partner, the perspectives are different from when you are working for someone.”

Tradition meets innovation meets fine dining

 The cuisine at Leela is markedly different from that of Chaat despite the inevitable comparisons. Chef Manav says, “I cook traditional Indian food but I innovate too. The Oxtail Chakundar Gosht [meat cooked with beetroot and its leaves] and Paneer Chestnut are popular. The Tokri Chaat, Jackfruit Dabeli Bao, Tandoori Pork Ribs, Kandhari Lamb Chops and the Bone Marrow Biryani are bestsellers. We change the menu incrementally every three months. I intend to showcase royal recipes from Greater India – the area that was the Indian empire during the Maurya kingdom in the third century BCE. Essentially, recipes from Greater India.”

Chef Manav’s style remains rooted in tradition, but his creations are authentic and innovative with the application of two of his favourite expressions – refinement and balance. He is also working on a recipe book with all his recipes but claims he has a long way to go before it is ready. Knowing his questioning nature, it should appear soon.

He's 38, and playing a sport that is demanding on the mind and the body. On the good days, like the stellar performance he gave at the SAFF championship series, he's surrounded by love and adulation. Then there are the bad days when even someone of Chhetri's calibre can miss an open goal, or falter in an important game and come home to a volley of abuse and disappointment from millions of fans. Whatever it might be, Chhetri's philosophy is simple: Stick with it and keep on going. To the public eye, Sunil Chhetri lives a very glamorous life and counts cricketer Virat Kohli among his close friends. Behind the scenes, though, discipline is everything, and the humbling knowledge that success comes through hard work and won't last forever, and that craft and discipline mean much more than talent.

But above all, Sunil Chhetri has always loved sports - it motivates him to get out of bed in the morning (before 6 am, every single day). "You would be shocked by the number of games I can play," he chuckled, in an interview. "If you call me and say there's a five-a-side happening in Bombay, if I can come, I will come. I can play cricket, badminton - anything. If there is a sport, I am there." On good days, bad days, and terrible days, you keep going. Discipline is the only way. "There is a feeling that this is going to end soon, and there will come a time when I won't be able to compete - that drives me. I know if I don't do things to take care of my body, I won't be able to do this," he says.

The rebellious teen

A "proud Nepali," Sunil Chhetri was born in 1984 in Secunderabad, to K.B. Chhetri and Sushila Chhetri, into a budding football legacy. His father, an army man, played football for the Indian Army Football team. His mother and sister are accomplished footballers too and played for the Nepal women's national team. The family relocated frequently, and Chhetri studied in a number of schools, including Bahai School, Gangtok, Bethany's in Darjeeling, Loyola School, in Kolkata, and the Army Public School in New Delhi.

He was a rebellious kid, even as a teenager in school, and completely driven by his passion for the game. He spent five years at the Army Public School in New Delhi, and admits he loved it there. However, the school never made it to the bigger tournament, which institutions like DPS and Mamta Modern School did. So, one day, he decided to transfer. "I took an impromptu decision without consulting Mom and Dad. I applied for my TC and went to Mamta Modern so I could play the bigger tournaments," he recalls. Chhetri also decided to move out of home and stay with the school's football team at the hostel instead. He was 16 years old, learning to take care of himself in every way - from arranging his clothes and textbooks to keeping up academically and continuing to play football. "It forced me to ensure I left no stone unturned," he says.

 In the pro league

Chhetri's talent was spotted early on. In 2001, he abandoned twelfth grade to play for the Indian team at the Asian School Championship in Kuala Lampur. This was in 2001, and the start of Chhetri's football career. Soon, the then 17-year-old was playing for Delhi's City Club. His talent was quickly spotted by Mohun Bagan Super Giants, however, one of the oldest football clubs in India - and the world. He played for East Bengal and then arrived at JCT, as the successor to Baichung Bhutia, who was then the undisputed star of Indian football.

Those were big shoes to fill, but Chhetri had great confidence in himself - perhaps too much, he admitted later, remarking, "I was very arrogant. I would look own on the other players - I would think, 'if you don't have my touch, my skill, what are you doing even." Then, he met Bob Houghton, who became the Indian team's first national coach. He could see Chhetri's talent, but also his arrogance. "For three months, he sat me on the bench and didn't give me a reason," Chhetri recalls. "My first impulse was to think, 'this is not my fault. It's his mistake, I have nothing to lose." Houghton left him on the bench until Chhetri began to realise that no matter how good he was, there's no fun if you're not playing. "Bob taught me what not to do," Chhetri often says. "I realised the importance of doing the right things everyday. Even if you don't like it, you do it. I started seeing life and football very differently."

A life of discipline

That was when he learned his biggest lesson - the importance of discipline. "If you want something really bad, you can't do what everyone else is doing," Chhetri believes. "If you want to be a Ronaldo, then your path is different. It is difficult, it is boring, it is monotonous, so not many people choose it."

The monotony that Chhetri describes is the sort that comes with great discipline. His day begins between 5.30 and 6 every morning - "I do some pushups, read for a bit and then do three Surya Namaskars. Depending on my day's training, I either eat or skip breakfast." He makes time to train, hit the gym, and spend time with his wife, but can't really manage anything more. "By 9, I'm in bed, with no phones. At around 10 pm, I'm out and then the next begins the same way," he says, describing his daily routine. He's also the first to admit that not every day is rosy. "Some days will be bad, but if this is what you want, this is the path."

In the global spotlight

In 2008, he scored three goals against Tajikistan in the 2008 AFC Challenge Cup, helping India qualify for the Asia Cup after 26 years. By the time he was twenty years old, Chhetri had received worldwide attention, and he went on to play in Major League Soccer USA in 2010 for Kansas City. He was the third Indian footballer to play outside India. Two years later, he joined the reserves team of Sporting Clube de Portugal. When that contract expired, he signed with the Bangalore Football Club and also made the city home. He continues to captain the club and is ranked 1 in the I-League.

All this has paid off handsomely. The Global Indian has found himself in the ranks of football greats, has helped India win the Nehru Cup in 2007, 2009, and 2012 and ensured the country's qualification for the Asia Cup. He was named Player of the Year by NDTV and is a three-time winner of the IIFA Player of the Year Award. In 2021, he created history during the SAFF Football Championship against Nepal, held in Male, when he scored his 77th goal. He was now equal to Pele with 77 goals in international football. He surpassed that milestone the same year, and is now among the top three highest goal scorers among active players.

Indian American politician, Kshama Sawant uses socialism and people power to establish a utopian society

(March 28, 2023) Just a few months into her third term as the only Indian American politician on the Seattle city council, Pune-born Kshama Sawant proposed a new tax regime against the corporate giants in the area. She knew that the fight would be long, with most people showing no confidence in her idea. Known as one of the boldest US politicians, Kshama has been at the helm of several historic reforms and laws that are changing the socio-economic in Seattle - and by extension the whole US. A member of the Socialist Alternative, she was first elected in 2013 and had notable success in 2015 when she managed to get the basic wage increased to $15 an hour. "My first week in office, two veteran politicians came by to inform me they would not allow me to pass any legislation, much less the $15 minimum wage, and that city hall would continue to run “on their terms". But they were unable to stop our movement. Six months later, our grassroots 15 Now campaign, working alongside labor unions and community activists, had won a groundbreaking minimum wage ordinance that made Seattle the first major city to pass $15. From here, minimum wage victories spread to more than a dozen cities and several states," the Global Indian recalled during an interview.

A young girl with big dreams

Hailing from a middle-class Marathi family based in Pune, Kshama's childhood was full of dreams of making a name for herself. A brilliant student, Kshama was equally talented in extracurricular activities, which won her several laurels. The dream, however, broke when her father passed away in a tragic accident when Kshama was just 13. "I grew up observing the consequences of the caste system and abject poverty — though I was part of a middle-class family from the Brahman caste. My earliest memory growing up in Mumbai was looking at the ocean of poverty and misery around me and seeing great wealth at the same time," the politician said in an interview, adding, that this exposure shaped her views and eventual conversion to socialism.

After finishing her schooling in Pune, Kshama pursued a bachelor's degree in computer science from the University of Mumbai and graduated in 1994. She soon married Vivek Sawant, a software engineer working for Microsoft, and moved to the United States. While she soon started working as a programmer, the discrimination faced by South Asians in the US motivated her to look into the problem. "Coming from India, what was striking is that you expect that in the wealthiest country in the history of humanity, there shouldn’t be any poverty; there shouldn’t be any homelessness… But when I came to the US I found it was exactly the opposite," she said in an interview.

In 1996, the politician quit her job and enrolled in a Ph.D. programme in economics at North Carolina State University. Her dissertation was titled Elderly Labor Supply in a Rural, Less Developed Economy. The couple moved to Seattle in 2004, where Kshama taught at Seattle University and the University of Washington Tacoma for nearly a decade before venturing into politics.

Making of a politician

It was a cold day, when Kshama, who was on her way home from work, came across a pamphlet of the Socialist Alternative meeting. She decided to attend – it was an event that changed her life forever. Intrigued by their ideas and notions, the politician decided to join them. After running unsuccessfully for Position 1 in the 43rd district of the Washington House of Representatives, representing Seattle in 2012, Kshama decided to stand again in the mid-elections in 2013, and against everyone's hope won the elections by 41 votes.

In 2014, the became the first socialist politician elected to the Seattle City Council in 100 years, and she campaigned on a platform that included rent control, a revenue-raising tax on millionaires, and a $15-an-hour minimum wage. In almost one decade-long journey, the politician has brought in several historic changes and reforms to uplift and empower the people of Seattle. And quite recently, she addressed the one issue that has been bothering her since she was a young kid in Pune - caste-based discrimination.

"It is not surprising that South Asian communities outside the US are not aware of the caste discrimination inside our country. But the reality is different. Since our victory, we got to know that caste discrimination is prevalent in other parts of the world as well. Wherever there is a significant concentration of South Asian immigrants, one can see the manifestation of caste discrimination. We’ve heard hundreds of gut-wrenching stories over the last few weeks showing us that caste discrimination is very real in Seattle. I couldn't just keep quiet," said the politician, who recently announced that she would retire from the city council at the end of the year, instead announcing that she would be launching Workers Strike Back, a national labour movement.

Alka Joshi  : Re-imagining India as a debutant novelist at 61

(Sheryl Dixit, April 6) Alka Joshi, 63, is a citizen of the United States, born in Jodhpur, Rajasthan, and currently residing in Pacific Grove, California. Her journey is highlighted by her transformation from an advertising entrepreneur to a best-selling novelist and brand ambassador for India at the age of 61. She holds a BA from Stanford University and an MFA from the California College of Arts and runs an advertising and marketing agency. Alka says The Henna Artist is bringing India to the world: It’s being serialized by Miramax, and the second book The Secret Keeper of Jaipur is due for a mid-year release.

Alka’s a great example of pursuing your dreams and pushing the boundaries: she was 61 when the book launched. Starting her career as a copywriter and later advertising agency promoter, Alka created campaigns for TV and radio. Over three decades she became adept at crafting themes with dialogue in a very short timeframe. Then Alka’s husband motivated her to try writing long-form fiction. “He said: You’re always telling stories about people and situations just to entertain me,” she recalls. Taking up the challenge Alka completed a two-year writing course at the California College of Arts, and came away with a Masters and a draft of her book.

Alka’s Indian heritage complimented her natural creative flair as a wordsmith. “Hard work is an Indian ‘thing’ because we are determined to succeed,” says Alka.

In 2008 after a gap of 40 years, Alka traveled back to India with her mother. Exploring her ancestral roots in Rajasthan not just transformed her into an Indophile, but set the scene for Alka’s book.

“I had no expectations of a land I barely remembered. But what a trip that turned out to be,” says Alka. India embraced its prodigal in a fulfilling and kaleidoscopic reunion. Alka’s senses were wonderfully overwhelmed: Colourful saris gracefully draped, enticing foods to delight the palate, aromas of wood fires, warm jelabies and henna drying on hands were visuals that eventually found expression in the book. “The markets, handicrafts, monuments...I saw India through my mother’s eyes and rediscovered my heritage. I was proud. I felt that I could breathe again.” says Alka.

Alka has lived in the US since 1967 when the family joined her father Ramesh in the US to do his doctorate. Determined that his children should have the best education, the family lived in mostly white neighborhoods with good schools. Alka and her brothers were the only brown kids and their school friends only knew India as an underdeveloped, starving, illiterate nation. At the impressionable age of 9 Alka started to feel ashamed of her origins, so she simply disassociated herself from the Indian stereotype.

But the trip to India changed everything. Also, the book’s title protagonist and henna artist evolved as Alka uncovered her mother Sudha’s traditional veneer that masked an independent and quietly assertive spirit. Sudha motivated her children to make their own choices, while her life remained embedded in convention, one in which she still cooked chappatis for Alka’s dad every night.

Alka is a spirited feminist having faced racism, sexism and wage disparity throughout her career. “I am all about women’s rights and choices. I hired only women (in her advertising agency) so they could gain confidence and experience. We were successful and we had fun,” she says.

Grateful for her privileged life, Alka pays back by supporting disadvantaged women and girls, and mentoring fledging authors.

That’s why she loves being Author Advocate for ‘Room to Read’, a US-based global nonprofit for children's literacy and girls' education. She represents them across geographies, encouraging kids to read, write, find and develop their talents.

The song of fire and ice: Meet Capt. Preet Chandi, the woman who crossed Antarctica thrice

"I was quite overwhelmed when I saw the sastrugi (wind-driven snow shapes that resemble sand dunes) for the first time. I'd never seen anything like it, their wing-shaped ridges are very mesmerising to look at," adventurer Polar Preet shared with me, as we connected over the telephone for an exclusive interview. (January 18, 2024) It had been about a year since I had been trying to get an interview with her. And so, when it happened a couple of days back, I couldn't help but ask why she chose Antarctica of all places on the planet to make her mark. I successfully finished the grueling, 156-mile Marathon des Sables ultramarathon in the Sahara, during the same operation. As I ran through the desert, I thought that if I could conquer this, perhaps I should contemplate preparing for Antarctica. And there was no turning back after that!"

For the next two-and-a-half years, the adventurer could be seen running in her backyard, pulling a heavy tyre as part of her training for the expedition. On November 7, 2021, Capt. Chandi started her first solo expedition from Antarctica's Hercules Inlet. After successfully undertaking two additional solo expeditions in the Antarctic, the Global Indian was appointed as a Member of the Order of the British Empire (MBE) during the 2022 Birthday Honours.

A rebel with a cause

It was an advert that she came across by chance - and which changed her life forever. "I was at the Derby City Centre, and I came across this 'Join British Army' poster with many smiling people. It looked interesting so I took it home. I think I was just over 18, and I applied to join the Territorial Army," said the adventurer, who added that the feat wasn't without the pushback she faced. "I didn't tell anybody that I joined the Army because it wasn't the expected thing for me to do. Even people who were close to me wanted me to leave the Army. They wanted to fit me into this box they thought I belonged in, but I think that pushed me to carve my own path even more. In fact, there are a few family members, who till today haven't even acknowledged that I went anywhere," Polar Preet laughed.

Despite all the odds stacked against her, Capt. Chandi joined the British Territorial Army as a physiotherapist in the Royal Army Medical Corps (RAMC). "Honestly, I don't think I would be able to even think of Antarctica had I not been with the British Army," she said.

The becoming of a champion

Even though she was enjoying her time as an Army officer, Capt. Chandi would often find herself wondering what more she could do. "I used to ask people around me, and there were several answers. People knew I was an ultramarathon runner, so they would suggest running on each continent or undertaking a big run. My boss just offhandedly mentioned Antarctica - like it wasn't big," she laughed. But that idea was stuck with the adventurer for a long time.

"I remember Googling 'polar explorers' and being captivated by images of people in large jackets with fur ruffs. So, I too went out and bought a jacket with a fur ruff. While I was filling out the 'Antarctic Logistics & Expeditions' application online, I realised I couldn't confidently answer 'yes' to some crucial questions, such as having experience in ice climbing or walking on glaciers. So, I booked a trip to Iceland and hired a guide to acquire the necessary skills. I brought the jacket along, and it was during that trip that I snapped the selfie which is on my website now and has been widely used. It's quite funny actually, because at that moment, I knew next to nothing about polar exploration, and the Iceland trip did little to prepare me for Antarctica; I just wanted to be able to respond 'yes' on the application form," the adventurer shared.

Preparing for such an extreme expedition is no easy task. "To be honest, it took me approximately two-and-a-half years to solidify my plans. However, starting in January 2021, I began a rigorous training routine, committing to six sessions per week. I did cardio twice a week on an exercise bike and focussed on strength training to ensure I could handle pulling a small sledge. In fact, two tyres became my constant companions – whether I was in London, Preston, or Derby, they went everywhere with me. Sometimes I would drive my tyres to work and then drag them back home. I still have those tyres in my backyard."

Money matters

While she has many sponsors now, including His Royal Highness, William, the Prince of Wales, finding sponsorship at the start was a herculean task. “People assume that the Army funded my journey but I started it at my own expense. It didn’t turn into an Army expedition until six months after I left, and by that point, I was already deep in debt. There was even a time when I was buying weekly lottery tickets to hopefully finance my trip,” Polar Preet said. “I read somewhere that my worth now is about £3-4 million, I wonder how they came up with that!”

The white continent

On her initial journey to Antarctica, the adventurer covered 700 miles (1,100 km), hauling a sledge weighing 200 pounds (90 kg). "I had to gather 48 days' worth of food, drinks, and equipment. Due to the pandemic and new Brexit rules, getting some essential gear took longer than expected. Plus, a bunch of the stuff I needed was pretty specific and custom-made. Like, I had to get my tent from France, of all places," Capt. Chandi shared, "But the trickiest part by far was sorting out food. I had to unpack everything from its original packaging and chop it up, making eating more convenient. I skipped luxury items or things I didn't need. If I had to pick a favourite piece of gear, it would be my Garmin inReach – this cool device for sending and receiving messages. The catch is, people can't hit you up unless you've messaged them first. I was only in touch with seven people, and four of them were out there on the ice with me."

Describing the place, the adventurer said, "It’s majestic - I really don't know how else to describe it. It's an incredible feeling to be in this white desert and witness these beautiful sunsets each day - something out of a fairytale. While they were sometimes very cold, the nights were full of stars - something one doesn't see in their city life. However, conditions can get really harsh, really quick - without any warnings. The same wind that makes the beautiful sastrugi is quite difficult to navigate. My sledge slipped twice on these ice ridges and I flipped them with much difficulty."

While it was a fairy world, staying isolated also meant dealing with loneliness and sometimes even sadness. "I remember being really frustrated and angry with people during the first two trips to Antarctica - especially the people who had almost gone out of their way to try and make it harder or stop me. You don't have much to distract yourself. So, I started documenting my journey via voice notes, which I uploaded to my blog. That was a great experience, to be able to tell the world where I was, how was my day, and what it takes to be on this expedition," shared the Capt. Chandi, who finished her first expedition in 40 days, 7 hours, and 3 minutes, securing the title of the third-fastest solo woman to independently reach the South Pole.

Capt. Chandi embarked on her second solo expedition from Hercules Inlet in late 2022. Her goal was to become the first woman to traverse Antarctica solo and unsupported, aiming to reach Reedy Glacier within 75 days by November 2022. However, she shared on an online blog on January 19, 2023, that she was roughly 30 nautical miles (56 km; 35 mi) away from her designated pick-up point, expressing disappointment at missing the record. The next day, it was revealed that Capt. Chandi had, in fact, set a new world record for the longest solo and unsupported polar expedition, covering 868 miles (1,397 km) up to that point.

A bruise named Elsa

Polar thighs - Antarctica's mystery ailment - are more common among women doing really long polar expeditions. And Capt. Chandi experienced it too on her second expedition. "I named my scar from the polar thigh injury, Elsa," laughed the adventurer, "It started quite early on during the expedition, and honestly it looked like a bruise and then a scab. I was in a lot of pain when the scab broke open, and I had to use pain relief tablets for a while."

While it was difficult to manage the injury in the extreme weather, Capt. Chandi managed to come back home without much damage. "I dressed it daily in the tent but after the wound opened, I kept the dressing on. When I came back from the expedition, I had to undergo surgery at Royal Derby Hospital. During my recent expedition to Antarctica, I had an extra merino wool base layer sewn in to protect it and checked my legs every day to make sure I didn’t have any other injuries forming," she shared.

History is made

For Capt. Chandi "It wasn't making or breaking the record that mattered, it was just the sense of adventure. I didn't announce this expedition at all, only a handful of people knew about it," said the adventurer, who became the fastest solo woman skier to complete this route, breaking the Caroline Coté’s solo ski record on December 28, 2023. "For me, it's crucial to emphasise that if I can go and accomplish something like this, anyone has the potential to achieve whatever they set their minds to. I hope people can connect that idea to their own interests, whether it's in the arts, science, adventure, or any other field," she expressed.

"People say I 'conquered' Antarctica, but I don't think these places are conquered. One should feel grateful that they allow you to be there. Each day, I'd express my gratitude to Antarctica. I can't say I enjoyed every single minute there – that's just the reality of it. If someone claims they enjoyed every moment, I'd find it hard to believe. However, there were some incredible days. When the weather was favourable, the expansive views allowed you to appreciate the diverse shapes and hues of light. It still amazes me that, out of all people, I made it there – the girl who was teased at school for the way she speaks," expressed the adventurer as she signed off.

Dr Neharika Yadav helms the super biker’s helmet with same ease as her doctor’s coat

(May 30, 2022) There aren’t many women bike racers in India. Amongst the few who have made a place for themselves in this male dominated space, is Dr Neharika Yadav, topping the list. The Gurgaon-based superbike racer juggles racing with dentistry, and that too with elan. Popular as Doctor N on the tracks, Neharika’s weekends are for the biking sessions while her weekdays are reserved for her clinics. The founder and CEO of two private clinics - Dr N’s Dentistry and the dental department of multi-speciality clinic, Sayaa Med - The Health Tower in Gurgaon, Neharika is balancing the act perfectly.  

Living with passion 

Her life’s journey so far has been all about dreaming, wanting and evolving. All was going well for this fauji kid when things took a sudden U-turn in February 2005 after her cab met with an accident. The head-on collision with a truck led to the death of the driver but she lived to share her story.

Her right hand showed no sign of movement even after two years of the accident. Devastated, she was almost on the verge of giving up on dentistry, but somehow continued to live in hope. After multiple consultations with surgeons across the country, one gave her hope of bringing back 50 percent of the hand movement. Her happiness knew no bound as in dentistry the right hand is the master in carrying out different dental procedures. Even as a biker, the partial movement causes her various attempts at throttling her bike. But she isn’t the one to complain as these are the passions, she has chosen for herself. Despite these challenges, she is one of the fastest woman super bikers in India – all thanks to her passion.  “I inspire others to pick up a passion as I believe that without passion there is no life,” remarks, the dentist-biker who is also a motivational speaker.

Helming the helmet 

Neharika, who has ridden at the Sepang International Circuit (Malayasia) and the Mugello Circuit (Italy), stumbled upon the world of racing five years ago. “A chance visit to the Buddh International Circuit in Noida filled me up with passion for the sport. I was so inspired by the all-male riders that I could not stop myself from following their path,” says the doctor, who has been practicing dentistry for the last 14 years.

When she entered the world of racing, she was already a practicing dentist, testing the waters just for the sake of hobby. Though she knew how to ride a bike, the level of biking required in racing was a different ball game altogether that she eventually mastered over a period of time. “I trained and practiced on my own getting guidance from top male racers of the country, along the way. Though I did not have any formal training, seasoned riders improved my performance by observing my moves on the track and polishing them with their expert tips,” says the alumnus of SR College of Dental Sciences and Research, Faridabad who is also armed with an MBA in hospital administration from Manipal University. 

Giving her best 

“Whatever you are doing at a point of time should be your priority. So, when I am on track, I forget about the clinic, and when I am in clinic, I forget about the track,” chips in the biker-doctor who visits the international formula 1 circuit at least once a month to practice with the stalwarts.  It’s the countdown to race that gets this top woman biker most excited. “It’s like a mega event where everyone is available on the track practicing with full zeal adding energy to the air,” the super biker adds.

Along with being a dentist and a biker, Neharika is also an UNESCO ambassador for kindness owing to her campaigns for rescuing Indie dogs and working for their adoption by caring individuals. “I have myself adopted four of them,” she smiles. 

Representing India  

Not many know that she is a Ducati racer for the Ducati Indian team. As she advanced in her racing prowess, she upgraded her bike Ducati 899 to the sleeker Ducati V4, now.

Alongside the Roadies fame Rannvijay Singha, she represented India in Ducati world motorcycle event. “The whole experience of representing the country and riding with so many top bikers from other countries in a beautiful place like Florence was an amazing experience,” gushes Neharika. Driving in Dubai and Abu Dhabi circuits are on the wish list of the biker woman who calls Valentino Rossi and Marc Marquez her inspiration.

Being a fauji kid  

Being the daughter of a fighter pilot, Sanjiv Yadav, Neharika spent an adventurous childhood moving between different air bases. “I have lived in air bases for almost 18 years of my life, changing places every two years, studying in Air Force schools across India.” The free-spirited and adventurous biker-doctor attributes her personality to the lifestyle. “It became a part of my persona. Due to my exposure to different cultures in India, I make friends easily and appreciate life in totality,” she adds.

Her love for sports also comes from her Anglo-Indian mother, Janice Yadav, who is a car rallyist. Added to that, “As fauji kids we had access to best sports facilities in every station. We were exposed to a very healthy and balanced lifestyle and that has contributed to my discipline of a racer,” remarks Neharika. Her father is now a commercial pilot and simulator instructor at IndiGo airlines.  

The fitness freak biker-doctor is always on track with her fitness goals, sweating out in the gym at least four days a week. “I did modelling for a couple of years just at a passion level for few campaigns of friends,” signs off the multitasker who loves great conversations over coffee, meeting new people, travelling, spending time with family, and watching movies whenever she finds time in between racing and dentistry.
