From Mumbai Streets to North Carolina Eats: Chef Meherwan Irani’s Chai Pani

(October 29, 2023) From chaat to vada pav and more, Chef Meherwan Irani’s restaurant chain called Chai Pani, is all about celebrating Indian street food with aplomb.

Pani puri, sev puri, dahi puri, vada pav, misal, bhajiyas – sounds like just a streetfood restaurant in India. This menu, however, belongs to Chef Meherwan Irani’s Chai Pani, in America’s Deep South, in Asheville, North Carolina.

In 2022, Meherwan’s flagship restaurant in Asheville, Chai Pani, was named Outstanding Restaurant by the James Beard Foundation, in the ‘Oscars’ of the culinary world. “It was jaw-dropping, honestly,” Chef Meherwan Irani smiles, as he chats with Global Indian. “To win the award for the Outstanding Restaurant, where the word Indian doesn’t even figure, was a shock. It means a lot because I got nominated five times for Best Chef but never got to the finals.” What’s more, Meherwan has just signed a deal for a cookbook with Penguin Random House’s division Tenspeed Press.

Chef Meherwan Irani

Born in Ahmednagar, in Maharashtra, Irani went to the US for an MBA, then lived and worked with companies like Lexus and Mercedes Benz in the Bay area for 12 years. A desire to get out of the rat race made him and his American wife Molly relocate to Asheville in North Carolina, with their daughter Aria. This was way back in 2009, and it was a move that would forever change the course of their lives; and go on to significantly impact that of others as well.

The co-founder and CEO of the Chai Pani Group of Restaurants, says, “Life in San Francisco was too busy and too expensive. So we moved to North Carolina and having grown up at the hotel my parents had in Ahmednagar, I was familiar with the hospitality business. I wanted to start a restaurant; I made a list of my favourite street food based on what I had eaten in Mumbai and other cities. Then I created dishes, ran focus groups with white Americans for feedback and over a couple of hours one night, I created the entire menu for Chai Pani.”

Chai Pani Time 

Meherwan called the restaurant Chai Pani because the phrase has multiple meanings in Indian culture and many layers, much the way the menu does. It literally means tea and water. While the common association is a small roadside snack with friends, or a small tip to grease the wheels, it mostly signifies hospitality and welcome (offering tea and water to guests in your home)!

Meherwan made frequent trips to India to figure out how the hawkers made bhel puri and other snacks. “There is no culinary school for vada pav, pav bhaji or bhel puri; or chai even. Also, I wanted to create food that was different, but not necessarily an acquired taste. The Indian food at restaurants is often too oily, too spicy and greasy and not how we make it at home. We give it a halka sa touch of spice and tadka and don’t drown it in chilli and ghee. I wanted to create flavour profiles that are universal, combinations that appealed, because with globalised palates, there was less fear of people not wanting to try the unknown.”

Elevating Street Food

Chai Pani essentially serves snacks you could get on the streets of  Indian cities and meals you’d be served in someone’s home — what Meherwan felt were the most under-represented Indian foods in Western culture. Diners craved Chai Pani’s stereotype-shattering food, drinks and service, and this first-of-its-kind establishment has been recognised as sparking a revolution in Indian cuisine in America. He also insists that managing people is an art; one that is diligently taught to staff. He avers, “The philosophy at the centre of Chai Pani, which is the purpose of our existence, is that we don’t serve food, but serve people by serving food.”

Word spread and the local, predominantly white populace started frequenting Chai Pani. Now, every Friday through to Sunday, from 5 to 9 in the evenings, they queue up for pani puri and the restaurant averages anything between 3000 to 5000 of them being sold every week! Other popular items are vada pav, sev puri and dahi puri.

Chai Pani and the kebab and rolls restaurant that followed, Botiwalla, have décor inspired by the Irani cafés one sees in Mumbai. Old Hindi film posters on the walls add a dash of Bollywood, as does the music playing in the background. The atmosphere is mela-like, especially during pani puri time!

What makes this restaurant authentic all the way is Meherwan’s integrity and approach to food. He reveals, “We make the sev in-house, we even set the dahi ourselves for the raita and dahi puri; and teach our staff how to do it as well. We buy puris from Atlanta, from an ex-team member who wanted to start his own business.” The puris, he says, resemble “what you get at the Elco Market pani puri stall [a famous street food place in Bandra, Mumbai] and like them, we too serve our pani cold.” The green chutney is Parsi style and the tamarind chutney reminiscent of Mumbai. The vada pav is served with a mix of chutneys and fried green chillies, just like it is sold on the streets of Mumbai.

I love my India 

Sticking to his Indian roots, Meherwan also serves Kingfisher and Haywards beer – both Indian brands and Old Monk rum, besides Thums Up. The cocktails here too have Indian flavour profiles, like a gin and cilantro cocktail and the Punjabi Porch Pounder which is gin, sage and Indian spices. The Tamarind Margarita is self-explanatory.

What started as one restaurant in 2009, is today a group of restaurants and includes Botiwalla which serves grilled kebabs, rolls, and more, along with the popular chaat items. Meherwan says, “We didn’t have the budget to expand though Chai Pani was self-funded. Family and friends like family came forward and expressed interest in our expansion plans. If you remember that scene in the movie Kal Ho Na Ho where friends come together to relaunch the Indian restaurant, it was exactly the same with us.”

Spicewalla is their retail brand of freshly crushed spices and blends – over a 100 of them and they include spice blends from across the world.  Meherwan leads a growing team across several locations: Chai Pani Asheville, Chai Pani Decatur, Botiwalla Atlanta, Botiwalla Charlotte, and spice brand Spicewalla, which has two outposts in Asheville and Atlanta.

Intriguingly, although Chef Meherwan Irani is half-Parsi, the menus don’t quite include Parsi dishes, nor do eggs dominate the menu, given how much the Parsis love them. An acknowledgement of his Parsi heritage is the raspberry soda [also made in-house] and the Falooda at Chai Pani. He agrees, “Yes, I did think of including Parsi dishes but other than Kheema Pav, others didn’t work out. I do sneak in the Parsi dishes like Egg Bhurji, Akuri, Dhansak and Patra ni Machchi at special events and galas.”

The Gift of Giving 

Through Chai Pani University, Meherwan and Molly provide formal training in leadership and management skills coaching to managers and employees who express an interest in future leadership positions. In 2018, the University launched an annual programme to send several of their employees to India for cultural immersion. Meherwan explains, “We pay for everything – and we take anything between eight to 15 employees twice every year. They love the visits, and many of them have come with us several times. Some have even learnt how to speak Hindi.”

As part of their visit, the team also goes to the hotel run by Meherwan’s parents. And they unanimously declare that meeting his parents and getting cooking tips from Meherwan’s Parsi mum is usually the highlight of the trip. “My mother is the heart and soul of why Chai Pani exists. Her cooking philosophy is all about balance – tradition and innovation.”

The co-founder couple are generous bosses in other ways too. He reveals, “We give away a certain percentage of our business to our staff – the managers and other employees, every year. That is so they have a sense of ownership. Our daughter Aria is now studying law, and we hope to bring her into the business someday.”

The Iranis also created Chai Pani Giving, an internal foundation dedicated to giving back and supporting causes related to hunger, poverty and socio-economic inequalities faced by immigrants, especially in the service and hospitality business. He says, “We believe that since our needs are taken care of, we need to do the next best thing and help the community. We conduct food drives at shelters for the homeless, provide support for education.” They have sent over 50 kids to school in the last seven years, and several to college.

Global Melting Pot 

Speaking on global trends in Indian food, Chef Meherwan Irani says, “Regionality is gaining prominence. Unlike an all is one approach, the originality of each dish is the standpoint. In Mumbai for instance, there is a cultural coming together that is reflected in food. Take bhel puri – the murmura comes from Andhra, the sev from Gujarat, papdi from the North and chutneys from Maharashtra. But, if you look across cuisines, veganism, conscious eating, giving back to the planet through the way we eat is growing.”

Theatre — his first love

It was in London that his story began but it soon shifted to India where he moved with his family at the age of four. New Delhi became the actor's new abode. After finishing his schooling at St Columba’s School, Kunal moved to the United States to pursue a Bachelor in Business Administration in Finance from the University of Portland, Oregon. But the shift was not so easy for this Delhi boy at the beginning - the actor often found himself lonely, missing his family and friends back home. However, it was precisely this sense of isolation that would become the catalyst for a transformative chapter in the actor's life.

Well, that, however, wasn't the only reason that Kunal started auditioning for roles in plays happening at the University. The actor had actually fallen for a girl, who was also a part of the University theatre programme. And so, he devised a plan - audition for the play, secure a part, and relish plenty of quality rehearsal moments with the girl. “The funny thing is,” Kunal said laughing at an interview, “I fell out of love with her, and fell in love with my one true love—acting.”

At his very first college theatre audition, the actor had already demonstrated a knack for embracing new experiences. “You know, the theatre’s a place where people who sort of feel like misfits can have a family because theatre is accepting of all types. I felt at home,” he shared. Soon enough, he found himself taking acting classes. What had begun as a hobby soon transformed into a life-long passion. “I was on stage. I had a moment where I had completely, for the first time in my life, discovered what it means to be present, and it happened on stage. I finished the play and went home and told my parents, ‘This is what I want to do for the rest of my life’, and I am going to do it.”

His aspiration to make a name for himself in the world of acting led him to Temple University in Philadelphia. There, he honed his craft while pursuing a Master of Fine Arts degree in acting. This journey helped him get a few American TV commercials, and the actor eventually bagged several shows on the prestigious London stage. However, it was his involvement in the 2006 production, "Huck & Holden", that truly turned heads and put this Indian talent on the map in the United States. The breakthrough came in 2007, when he landed a significant role with a special appearance on the popular CBS show "NCIS," portraying an Iraqi terrorist.

It all started with the Big Bang

Kunal was determined to shatter the stereotypes that often confined Asian actors on American TV. He seized an opportunity to audition for the role of a scientist in "The Big Bang Theory", and as the saying goes, the rest is history. This immensely popular series propelled the actor to stardom, where his impeccable comedic timing shone. His character, Raj Koothrappali, wore his Indianness proudly, endearing himself to viewers. However, what many don't know is that the show's creators originally envisioned the character as a first-generation American. But they were so impressed by Kunal's audition that they reimagined the character to reflect his background as an immigrant from India.

“They allowed me to really be an Indian, who has Indian qualities who doesn’t run away from some of them I think they really found a nice balance with Raj,” the actor said. Such has been the popularity of the show that it has been nominated for multiple Emmy, Golden Globe, SAG, and Critic’s Choice Awards and has won the People’s Choice Award for favourite network TV comedy three years in a row. During its remarkable 12-year run, "The Big Bang Theory" made Kunal a household name across the United States. However, amid his television success, the actor diversified his portfolio by venturing into film and Broadway productions. He even lent his voice to the 2012 animated hit, "Ice Age: Continental Drift," and embarked on his film career with the 2014 romantic comedy, "Dr. Cabbie".

And Kunal's creativity didn't stop there. He authored a book titled "Yes, My Accent is Real: and Some Other Things I Haven't Told You". This humorous memoir delves into his experiences growing up in India and traces his journey to becoming an actor in Los Angeles. “I didn’t want the book to be a self-therapy session. But I wanted to share a side of the journey that was unglamorous. The general perception around Hollywood is that it is this perfect place with rich people and tanned bodies, fast cars, and movie premieres. And sometimes it can be that, but under all that materialism lies a strong and diverse heartbeat. I wanted to humanise the experience,” he shared.

Loving what he does

The 40-year-old actor, who has played many onscreen roles, has become a part of the South Asian tribe that has been putting India on the world map. After "The Big Bang Theory", the actor's focus shifted from acting to a diverse array of projects. The actor and his wife, former Miss India Neha Kapur, are dedicated to leveraging their platform for a greater cause, exemplified by their generous scholarships for students at the University of Portland specialising in Performing & Fine Arts. They also extend their support by providing funding for guest artists and the University's annual participation in the American College Theater Festival.

The actor's heartfelt desire is to see young aspiring actors complete their education and follow their dreams, much like he did. "I love what I do. Regardless of the destination, it is important to love the journey. Love what you do. Let the universe decide the rest," said the actor addressing the University students during a conference.

is days in the late 1990s in the compounds of Delhi University where he pursued a Bachelor of Commerce. Interested in finance and numbers, he cleared his CA in 2000, and soon joined Pricewaterhouse Coopers as an assistant manager where his role required him to manage audits and provide clients with consultation and advisory services. It was in 2003 that he switched to the PWC office in the US, and in total, ended up spending 17 years at PwC, which was also Tesla's longtime accounting firm.

"Right from the time he joined PwC, there was a sense of purpose in him,” Deepak Kapoor, former chairman of PwC India, told Forbes India. It was Kapoor who hired Taneja in 1999 and remembers him as someone who "sticks out in your memory" as he was always among the top performers in the company. Those 17 years helped PwC, he not only brought a sense of purpose to the table but also excellent people skills which helped him climb up the ladder. Kapoor describes Taneja as "very social and excellent accountant," adding that "his standards are very high."

It's these very skills, ethics, and standards that he brought to Tesla as he became its corporate controller in 2018 and was named chief accounting officer in March 2019. If reports are to be believed, Taneja's net worth is estimated at $52.1 million.

Taneja is not only known for his financial expertise but also for his wider influence. He was chosen to be a director at Tesla's Indian branch, Tesla India Motors, and Energy Private Limited. This shows how important he is in guiding the company's plans in India.

Taneja's appointment as CFO comes at a time when Elon Musk is planning to ramp up manufacturing and has plans of investing in India shortly. This June when he met PM Modi in New York during his US state visit, Elon expressed interest in exploring the Indian market for EVs. Calling himself a "big fan" of PM Modi, he said, "India has more promise than any large country in the world. He [PM Modi] really cares about India because he's pushing us to make significant investments in India, which is something we intend to do. We are just trying to figure out the right timing."

With the Indian EV market expected to grow by $113.99 by 2029, Elon Musk is looking at the hotspot that India has become in recent times. In the global electrification journey, Tesla, which is facing stiff competition from EV players like Mercedes, BMW, and Volkswagen, wants to draw more potential buyers. And now with Tesla's plan of expansion, it seems Taneja will have his hands full.

A North London lad, he was the perfect child until he decided to go rogue in his teens. From drugs to violence, Shetty dabbled in all and was thrown out of his school three times. But after a little bit of soul searching, he enrolled in a business school to make it big. Inspired by the stories of self-made entrepreneurs and the CEOs, it was the success that Shetty was chasing after. When Hollywood actor Will Smith made his first public appearance in Mumbai in May post the infamous Oscar slap gate, murmurs of him meeting Indian spiritual leader and life coach Sadhguru in search of "healing" and "correction" echoed across the globe. Sunny Jain – soaking the world in the energy of Bhangra

Indian origin Sunny Jain is popular as one of the foremost South Asian-American jazz musicians, making an innovative blend of the cultural sounds of north Indian music, jazz, and various other musical influences. His albums have garnered global praise. Currently serving as the 2023-24 artist in residence at Wesleyan University, he is diligently working on his inaugural music theatrical production, 'Love Force'.

 The dhol player has authored two instructional drum books, ‘The Total Jazz Drummer’ and ‘Drum Atlas: India’, both published by Alfred Publishing. With a career spanning close to three decades, Sunny has received numerous accolades. In 2007, he became the first artist endorser for India's oldest and largest musical manufacturer, Bina Music.

 Sunny had also played dhol in the first Indian Broadway show, ‘Bombay Dreams’ in 2004, and made his Hollywood debut playing dhol in the movie The Accidental Husband, starring Uma Thurman, Colin Firth, and Isabella Rossellini.

In 2002, he was honoured as the Jazz Ambassador by the U.S. Department of State and the Kennedy Center, which led to extensive tours throughout West Africa.

“If we can unite people of all backgrounds and ethnicities to partake in the exuberance of life through the universal language of music, then life is much sweeter,” Sunny remarked in an interview. 

Illustrious musical associations

While being actively engaged with Red Baraat, Sunny was also the drummer for the acclaimed Sufi rock band Junoon for several years, performing at the Nobel Peace Prize concert in 2007, Srinagar University in Kashmir in 2009, and the General Assembly of the United Nations in 2009. During the time, he had also recorded the single ‘Open Your Eyes’ with Peter Gabriel.

Sunny Jain is currently associated as band leader and drummer of ‘Wild Wild East’. Their first album was released in 2019 by Smithsonian Folkways. The musical group had made headlines with its outstanding performance at the renowned Smithsonian Folklife Festival at the National Mall in Washington D.C.  The band recently performed at Tiny Desk Concert for NPR in 2024.

Man of milestones

Sunny has received grants for his compositions and performances from various organizations such as the Aaron Copland Music Fund, Chamber Music America, Mid-Atlantic Arts Foundation, and GlobalFEST. He was also honoured with the Arts International Award in early years of his career, which supported his jazz group, 'Sunny Jain Collective', during tours in India.

Much recently, in 2022, Sunny played alongside drumming legends Mickey Hart, Zakir Hussain, and Giovanni Hidalgo in Planet Drum's first show in 15 years.  In 2023, he served as the music producer for Mira Nair's 'Monsoon Wedding, The Musical' based on the director’s widely acclaimed 2001 movie.

A few years back he had donned the hat of the musical director for the OBIE award-winning show, 'The Jungle', and had directed music for Lincoln Center’s 60th Anniversary celebrations.

Merging innovation with heritage

“My parents were immigrants – I was born and raised in Rochester, N.Y. where I had a healthy dose of a little bit of everything – Bollywood classics from the 50s through the 80s, devotional songs of Jainism through both my parents, and then some Hindustani classical. I was getting all the Western music, like Casey Kasem’s Top 40, from my two older siblings,” Jain shared in an interview.

He went on to study jazz, and was inspired by greats like Elvin Jones and Max Roach but chose to create his own music by blending jazz with South Asian tunes. People loved his innovative music and Sunny started making a name for himself with packed night-club performances that eventually led to prestigious collaborations and assignments.

Later, in the 'Sunny Jain Collective', he explored how Indian classical music could influence jazz, working with artists like Rez Abbasi and Samita Sinha. With 'Tongues in Trees', a trio including Sinha and Grey Mcmurray, he combined indie-pop with Indian rhythms. Alongside Pakistani musician Ali Sethi, Jain formed Resident Alien, focusing on the theme of migration.

Giving back

Sunny Jain has always tried to merge his music with purpose. At the beginning of his career, through his project, ‘Taboo’, he had addressed social justice issues affecting the South Asian community, drawing from ancient poetry to tackle modern problems like sexual identity and domestic violence.

During his association with the band ‘Junoon’, he had used musical performances to raise awareness and funds supporting flood victims of Pakistan and Pakistani refugees in the Swat Valley.

During the pandemic the dhol player and jazz composer had released ‘Phoenix Rise’, a collaborative album featuring over 50 artists, along with a 72-page book promoting social justice.
